Sorry for all the vegan-Italian spam BUT i just had to clear some pictures off my phone and I thought I should share some of the recipes here for you all! If you just started following, here’s what you missed:
Seitan Pepperoni Rolls! (makes 2 rolls)
Make 1/3 the recipe of Herby Homemade dough (freeze the other 2/3 for pizza later), a batch of homemade cashew ricotta, and homemade pepperoni seitan. Split dough into two balls and roll them out into rectangles on a lightly greased pan. Spread on the cashew ricotta and sprinkle with nutritional yeast. Cover with on a thin layer of your favorite tomato sauce (I used Pennsylvania Macaroni Co’s tomato basil), sprinkle with balsamic vinegar, and place on seitan pepperonis, leaving room on the edges so you can roll it up easily! Then just roll the dough up slowly and carefully, and bake at 400 degrees F until rolls are golden brown.

Homemade Seitan Pepperoni Using this recipe from Food Doodles!
So quick and easy to make, tastes just like the real deal, and is great for pizza or just slicing and eating alone.
So apparently if you put tortillas or wraps in a muffin tin in the oven they turn into cute little cups! This new knowledge, along with a pizza craving around midnight, led me to throw together a dozen of these little guys.
(Vegan if you want them to be) Homemade Pizza Bites!
Cut a Flatbread Rollup or any wrap or tortilla into circles, and then press each circle into a spot in a muffin tin. Layer the inside of each cup with vegan cashew cheese (or any vegan or non-vegan cheese), your favorite pasta sauce, and a homemade seitan pepperoni (or veggies, or the real pepperonis). Bake at 350 degrees F for 30 minutes, or until the cups are hard. A perfect late-night snack!
We’re working on making some marinara, pizza dough, cashew ricotta, and seitan pepperonis for the ultimate vegan pizza rolls!
